Three-in-One Meal #1 - Roasted Chicken

​Meal #1 - Roasted Chicken

​
Serves a family of 3 or 4
1 Medium whole chicken (about 2 to 2 ½ pounds (lbs.) – Rinse and pull out innards
1 head raw Garlic slivered
  • Rub Montreal Steak seasoning into the chicken skin
  • Loosen skin from the flesh and generously place pieces of garlic in-between the chicken‘s
    ​flesh and skin
 
Bake uncovered at 425 degrees for about an hour or until the temperatures reaches between
170 degrees and 180 degrees

Serve with seared asparagus and either a baked potatoes or oven fries
Whatever meat is left over divide equally mixing both light and dark meat
  • Cut or pull into bite size pieces and reserve ½ for Meal #2
  • Freeze the other ½ the meat to prepare Meal #3
Try These Spices for a Different Flavor
In a Small mixing bowl add equal amounts of:
  • Black Pepper
  • Salt
  • Dried Basil
  • Oregano
  • Paprika
And mix all the seasonings together
If you like it spicy, also add equal amount of cayenne pepper
  • Get the oven HOT!  Preheat to about 45- degrees
  • Preparing the Chicken
    • Give the bird a bath by rinsing with cold water
    • Pat dry with a paper towel
    • Massage the clean bird with a good amount of olive oil
    • Then rub the bird with gratitude and the dried spices
Place the bird in the roasting pan and cook for about an hour
Remove ½ of the remaining chicken off the bone from Meal One and refrigerate until cold

Meal #2 - Chicken Salad

Cold Chicken (small pieces)
1 celery stalk
½ finely chopped onion
  • Combine all the ingredients in a bowl and mix together
  • Add mayo, mustard or your favorite dressing
  • And if available add a few grapes cut in half
  • Stir together
Serve on crisp of lettuce with crackers

Meal #3 - Chicken Soup

You use the last part of the chicken carcass
  • 5 Carrots
  • 2 large Onions
  • 6 Bay Leaves
  • 3 Celery stalks
  • 1 bulb of Garlic
 
  • Place the chicken carcass with the remaining meat into a large pot
  • Cover the chicken with water about 2 inches above the carcass
  • Place the pot on the stove top to medium high heat uncovered
  • Bring to a boil
  • Save about ½ of the stock and freeze
 
Add the carrots
I like big bite size pieces of carrots and the most flavorful are the organic Nash carrots.
It does make a difference!

Chop Celery and Onions coarsely
Peel bulb of garlic – cutting off the little root off each clove
 
Add the carrots, celery, onions and garlic to the pot of chicken
  • Add the Bay Leaves and turn down from the boil to a simmer
  • Cover the pot
  • Simmer on the stove top for about an hour
  • Remove the top and turn back to a boil

Carefully remove the carcass and transfer to a big platter
You will need a medium sized bowl and also a small garbage bag for the bones
 
After the carcass has cooled enough to touch
Remove all the meat and add it back to the pot
Stir and it is ready to serve

    Add some basil, oregano, rosemary, garlic

  • Potatoes
    Just about any and all.
    What kind of a mood? 
    ​Add some spice today!

  • Eggplant
    Basil, oregano, marjoram, mint,
    thyme, garlic

  • Asparagus
    Chili flakes, dill, lemon verbena, garlic

  • Carrots
    Cinnamon, dill, marjoram, mint,
    ​tarragon, allspice​​

Yes!  Learn by experiment – trial and error.  Yes, you can explore your creative side and remember
​that you can always add to taste, but you cannot take it out.

  • Cinnamon 
    Mostly used in baking and sweet dishes
    I like to use its spicy fragrant flavor in savory dishes
    as well

  • Chili Flakes 
    I often like to marry flavors in my dishes with
    a balance of sweet and heat

  • Paprika 
    • Comes from the fruits of several varieties of sweet red peppers ground to make paprika,
      Depending on the flavor preferences, paprika varieties vary from mild to spicy and even smoky. 
    • If possible try and store in a cool dark place for up to 6 months

  • Oregano 
    • Used in most Italian and Greek dishes. 
    • It has a robust, peppery flavor, similar to marjoram

  • Marjoram 
    • Almost a lighter version of Oregano.
    • Mostly used in Chilean cooking to flavor fish, soups and steaks

  • Bay Leaf
    • Comes from the Laurel Bush
    • Adds immeasurable flavor to soups, stews, savory meat and fish marinades,
      ​as well as pasta sauces and veggies
    • Very versatile and can be eaten, but I prefer to remove mine
    • I always add several leaves to my Matzoh Ball Soup and if the kids find one,
      they get to make a wish!
  • Dill 
    • Not everyone cares for this herb. 
    • I find that id the correct amount is used it can be quite nice
    • I use it for making a ranch style dip/dressing or as one of my pickling spices

  • Garlic Powder and Onion Powder 
    • Typically use as part of dips, spreads or rubs

Hi my name is Marie and I am moving into my first apartment.  Tiffanie, what cookware and utensils do I need and do you have suggestions for someone like me that has a limited budget?

Having the right cookware and utensils doesn’t have to be expensive – but learning about what makes good cookware good can be learned by researching online; visiting your local retailers during a house wares department sale. You can also plan a treasure hunt to your local thrift store or garage sale. Gathering information can easily be turned into a true treasure hunt with your family. Who knows – you may find exactly what you are looking for or exactly what you need.
Good cookware is important... 

​A few good choices include:
  • 1 med-sized scratch less on-stick pan
  • 1 large pot for boiling pasta and/or potatoes
    • 1 large stock pot for soups 
      (can be the same as the pasta pot)
  • 1 small sauce pan
  • 1 medium sauce pan
  • Colander for straining

Discover Flavors from All Seasons with Tiffanie

Welcome
There is so much joy in cooking and sharing meals with family and friends.  As many people ask me questions about what to cook, when to cook what and even how to select herbs and spices.   My blog will allow me the opportunity to share my knowledge and also answer questions.

When I think of fruit and veggies, I prefer to buy what is fresh and in season.  It’s best to buy locally and seasonally.  More often than not, it is even more cost effective, sustainable and plentiful.

Of course, it depends on where you live.  In the eastern United States, they have more defined seasons; and here in Washington State there is a lot of rain that helps keep things green and clean.
 
No matter where you live, ask your local produce person in the store or during spring and summer take the time to take a few adventures to your local farmer’s markets.
 
I work in the deli at PCC Natural Markets in Washington.  I am proud to say that we make all our salads fresh daily and offer as many fresh seasonal choices as possible.

I approach meal planning knowing that my goal is to include locally grown farm products while still keeping in my budget.   When I purchase fresh produce, I simply buy what is on sale.  I build my meals around including healthy foods and following the bounty of fresh fruits and vegetable grown each season.
